I ended up rooting my phone, making a full backup, installing the latest Pixel Experience, rooting, restoring. All is working fine so far!
The best way is to put the zip file on SD card, or on USB flash drive, using USB C to USB 3 adapter. Boot to recovery, Apply update from SD or Flash drive. Voilà !
